Abstract: In light of the current public health challenges posed by chronic diseases, exploring natural resources with therapeutic potential is a promising approach. This study focuses on pumpkin seeds and pumpkin seed oil (Cucurbita spp.), aiming to highlight their chemical composition and biological properties. A literature review revealed that pumpkin seeds and oil are rich in unsaturated fatty acids, tocopherols, phytosterols, carotenoids, proteins, and minerals. These bioactive compounds impart antioxidant, anti-inflammatory, hypolipidemic, and antidiabetic properties to the seeds and oil. Other studies suggest that pumpkin seeds and oil may protect against certain forms of cancer, cardiovascular diseases, and prostate disorders. This thesis is structured around three main areas: an overview of the Cucurbitaceae family, a biochemical analysis of pumpkin seeds and oil, and a review of their documented therapeutic benefits. This work emphasizes the potential of pumpkin products in preventive nutrition and phytotherapy strategies while highlighting the importance of responsible use in light of naturally occurring antinutritional compounds.
