Abstract: | Food safety is a major challenge faced by countries worldwide, particularly in the restaurant sector, which is witnessing an increasing number of foodborne illnesses. This study was conducted in the city center of Mila with the aim of assessing the level of knowledge and attitudes of restaurant managers regarding food safety. The survey was carried out between January and February 2025 using a specially designed questionnaire. The study included a sample of 29 participants. The level of food safety attitudes ranged between a minimum of 62.5% and a maximum of 93.75%. Overall, these attitudes were positive, with a general average of 81.25 ± 7.66. The results also showed that the average level of knowledge in food safety among restaurant managers was 73.37 ± 12%, indicating a knowledge level ranging from moderate to good within the studied sample. Knowledge scores ranged from 50% to 100%, reflecting disparities in participants’ understanding of food safety concepts. These results suggest that most managers possess an acceptable level of food safety information, while some still suffer from significant deficiencies. The study further revealed that certain sociodemographic variables such as age, education level, or residential area did not have a statistically significant impact on knowledge or attitudes related to food safety. Therefore, training and awareness efforts should be directed uniformly across all areas and age groups to improve food safety practices. |
