| dc.description | The development of a new food product requires an evaluation of its sensory quality before it is sold on the market, to test its acceptability by the consumer. In the present study, different concentrations of the aqueous extract of Rosemary (75%, 100%) and Oregano (25%, 100%) were added to the raw cow's milk collected in the region of Mila (Algeria), these products were investigated by sensory analysis by tasters. Dans la présente étude, différentes concentrations de l’extrait aqueux du Romarin (75%, 100%) et Origan (25%, 100%) ont été additionnées au lait cru de vache collecté dans la région de Mila (Algérie), ces produits ont été investigués par analyse sensorielle par des dégustateurs.
